A former Indian restaurant on Nassau Street is slated to become a Spanish market and cafe this spring.

More than 50 varieties of cheeses, hand-carved, dry-cured meats, sandwiches and salads, bite sized foods and a full Paella menu are just some of the items that will be offered at the new Spanish food market and cafe that is slated to open in downtown Princeton in March.

Despaña Foods, a New York-based company that operates food markets and a tapas cafe in SoHo, will be located at the former site of Palace of India (formerly Kalluri Corner) at the corner of Nassau and Olden streets.

Business partners Angelica Intriago and Bruno Romero are fully remodeling the interior of the restaurant once they receive permits from Princeton Borough to move forward with the project.

“We are replicating many parts of our retail food market concept in SoHo,” Intriago said.

The market will carry specialties from Spain that have made the business well known in New York, she said.

“Since we have more room and a full kitchen on Nassau Street,  we will be developing our prepared foods even further in Princeton by offering our Despaña menu staples such as bocadillos (sandwiches) salads, croquetas, bite sized foods (pintxos), a full Paella menu and much more,” Intriago said. “We have already happily received several emails from customers living in the area who are familiar with Despaña in NYC and are anxiously waiting for us to open.”

Romero, a Spaniard from Salamanca will be the director in charge of the Princeton venture. The cafe will be BYOB.
