Taco Truck to Open in Princeton Dec. 27, All First Day Proceeds Will be Donated to TASK

The Taco Truck is on schedule to open its newest restaurant at the Princeton Shopping Center on Dec. 27. The restaurant replaces the former Learning Express store.

The Taco Truck Princeton will celebrate its grand opening with a “pay what you’d like” day to benefit the Trenton Area Soup Kitchen (TASK). All proceeds will be donated directly to the Trenton-based agency that provides thousands of meals and countless services to those in need in Mercer County.

Menu items include tacos, tortas, burritos, salads, and soup, accompanied by crispy corn tortilla chips, rice and beans, salsa, guacamole and various sides. Visitors with a sweet tooth can enjoy fried sweet plantains and churros with seasonal sauces. The menu includes vegetarian, vegan and gluten-free selections. There is also a menu for kids. The restaurants ensure that all beef, chicken and pork products are raised on a vegetarian diet without hormones or antibiotics.

Featured dishes at The Taco Truck’s Princeton restaurant include:

• Pescado taco with crispy catfish, red cabbage, pico de gallo, Mexican tartar sauce and chipotle salsa on a flour tortilla

• Barbacoa de Costilla tacos with braised shredded beef, onions, cilantro and roasted red salsa

• Aguacate tostado tacos with fried avocado, black beans, sesame seeds, pickled onions tortillas fritas and chipotle salsa

• Verduras tacos (rotating seasonally): vegan Hongos (mushrooms), vegan Pepina with zucchini & pepper and a savory vegetarian Kale con Papas topped with crema and queso

The Taco Truck’s Princeton location is designed to capture the fun of its namesake outdoor food truck. Guests will place their orders at two broad windows set in a curved, aluminum-wrapped wall displaying a menu board and views of the kitchen. The Princeton restaurant features energy-efficient appliances, reclaimed wood, LED and fluorescent lighting, dual flush toilets, composting of food and biodegradable/compostable to-go packaging.

In 2009 the Taco Truck launched its first truck in Hoboken, quickly growing to add more trucks, kiosks, carts and storefronts in New Jersey, New York, and Massachusetts.
